I was in search of a pasta sauce which is not tomato based, when I found this interesting recipe. This recipe is inspired by Heidi's recipe of Winter pasta from 101cookbooks.com. Though this recipe does not look too appetizing, it was a healthy yummy change from the regular pasta I make.Ingredients:
- 5-6 cloves of garlic, peeled and slightly crushed
- 2 cups of spinach
- 4-5 tbsps of olive oil
- 1/3 cup of feta cheese, plus more for topping
- Freshly ground black pepper
- 2 Green chillies
- 8 oz of dried whole wheat penne pasta
- Coriander leaves--a small bunch
- Boil water (with salt added) and cook the pasta Al dente or as instructed on the package
- In a pan, saute the garlic, green chillies in a few tsps of olive oil.
- Add the spinach, coriander and saute till the spinach wilts (don't over cook it)
- Puree the above with olive oil and feta cheese and set aside
- Toss the pasta with the puree in the pan
- Top with crumbled feta cheese and coriander leaves.
